We use only top-quality UK Beef and Trim to be free from sinew and the bad fat. We then take this beautiful clean meat and Hand Cut it into cubes. Fat is added to the mix using only top-quality fat that will never stick to your pallet. Our ratio of meat to fat is 90% beef and 10% fat. Cubes are then cured with vinegar and special spices for a set duration. (Family Secret). Cubes are then minced and stuffed into 100% natural sheep’s casings. They get hung in an environment created and monitored to replicate the Kalahari winter conditions in South Africa. With a lot of love and care, it produces the perfect Dried sausage.
We do use preservatives in the process to make sure it stays safe from harmful bacteria’s like clostridium botulinum… (These preservatives date back to the 1800s when ships had no fridges)
